Oranges, kiwis, apples, watermelon, melon, blueberries, and other fruits decorate the plate. Sitting on top is a small scoop of yuzu sherbet. It looks just like a parfait.
Why exactly was such an impactful curry created?

The Birth of Fruit Curry

At “À Votre Santé Endo,” the curry itself contains banana purée. At the time of its founding, the chef became interested in a “Fruit Health Method” that was being introduced on TV and came up with the idea. However, this still wasn’t the beginning of fruit curry.
The trigger that truly created fruit curry came from a dance teacher who was a regular customer. The shop’s dry curry originally came with a little banana on top, but the teacher always ordered extra banana. From there, the chef thought, why not add a variety of fruits on top of curry? And so fruit curry was born.

First, a Taste of the Roux

With so much fruit piled on, you may wonder where to start. First, let’s enjoy the flavor of the curry itself. Since the curry contains garam masala, a classic Indian spice blend, along with ginger, it has a pleasantly sharp spiciness. It’s the perfect kind of heat for summer!

Eating with Fruit

Next, try the curry with fruit. Start with the banana. Its sweetness blends naturally with the curry’s heat, giving the dish a richer depth of flavor. The balance of sweet and spicy is irresistible. Absolutely delicious.

Now, watermelon. In summer, you can enjoy watermelon, melon, and blueberries; in autumn, persimmons; in winter, strawberries—the seasonal variety is a real treat.
You can cut the watermelon into bite-size pieces with a fork, or simply pick it up and take a juicy bite. The refreshing sweetness cleanses the palate instantly.

Melon works in the same way—great on its own, or paired with curry. Combined, the melon’s juiciness mellows out the curry for a softer flavor.

How to Use the Yuzu Sherbet

The yuzu sherbet can be eaten between bites of curry to soothe the tingling sensation in your mouth from the spices.

But actually, there’s a surprising way to use it.
According to staff member Mr. Endo, you can scoop some sherbet onto the curry and lightly mix it in before eating. Though unconventional, it makes for a fantastic flavor twist. The curry takes on a gentle yuzu fragrance. This is a must-try way of eating it!

With just one plate, you can enjoy fruit curry in so many ways.
