This time, we went with the standard \u201cHakata Ramen\u201d (pictured left). At Nagahamaya, there are six options, ranging from firm to soft: \u201c<em>konaotoshi<\/em>\u201d (which literally means \u201cwashing off the flour\u201d), \u201c<em>harigane<\/em>\u201d (\u201cwire\u201d), \u201c<em>barikata<\/em>\u201d (extra firm), \u201c<em>katame<\/em>\u201d (firm), \u201c<em>futsu<\/em>\u201d (regular), and \u201c<em>yawarakame<\/em>\u201d (soft). It seems that \u201c<em>harigane<\/em>\u201d, which is cooked for just 10 seconds, and \u201c<em>barikata<\/em>\u201d, which is cooked for 20 seconds, are the most popular among Hakata ramen aficionados.<\/p>\r\n<h2 class=\"num\">Start by appreciating the soup<\/h2>\r\n<div class=\"article-img-small\"><img decoding=\"async\" src=\"https:\/\/goodie-foodie.com\/wp-content\/uploads\/2022\/10\/22053_05_DSC5181.jpg\" alt=\"Start by appreciating the soup\" width=\"1500\" height=\"1000\" class=\"alignnone size-full wp-image-2962\" \/><\/div>\r\n<p>Once your Hakata ramen is served, first use your <em>renge<\/em> (soup spoon) to enjoy a taste of the soup. This time, we ordered our noodles \u201c<em>barikata<\/em>\u201d (extra firm). The freshness is a perfect accent to the rich<em> tonkotsu<\/em> soup. The spicy kick is just what it takes to bring a new dimension of flavor to the tonkotsu soup. Each time you get more noodles, you are free to change the firmness, and enjoy the unique flavor and texture of each level.
