It's impossible to eat a standing mille-feuille neatly! Don't hesitate—lay it on its side.

“Mille-feuille” is French for “a thousand leaves.” It refers to a pastry made by layering puff pastry and cream multiple times. To get straight to the point, it’s impossible to eat a standing mille-feuille neatly! Don’t hesitate—start by laying the mille-feuille on its side. At “Ginza Miyuki-kan,” they’ve been serving mille-feuille on its side for many years.

Inserting a knife into a standing mille-feuille ruins its beautiful form.

If you insert a knife while it’s standing, the cream will ooze out, and its beautiful shape will be ruined.

Once it’s laid on its side, divide the mille-feuille into the upper and lower layers and eat them separately. Start cutting bite-sized pieces from the lower left side of the bottom layer—it’s the smart way to go. There are various types of mille-feuille, but eating it layer by layer is the common method. When cutting the puff pastry, press the knife straight down from above to get a clean cut!
