Jajamen noodles are a specialty noodle dish of Morioka City, Iwate Prefecture. Its origin is the Chinese dish jajangmyeon noodles, but the way to eat it is different. We asked a specialty restaurant how to eat jajamen noodles the Morioka way!

First mix together as it is.
When the noodles are brought to you, the first thing you need to do is mix the noodles! After the niku-miso (miso with ground meat), cucumber, and ginger are evenly spread over the noodles, take your first bite.
Add your own style with seasonings
Once you have eaten a little more, you are ready for the next phase. Feel free to change the flavor with any of the seasonings on the table! Vinegar, chili oil, and grated garlic are recommended for those first trying the noodles.
We recommend beni-shoga (red ginger)! It is also important to add more niku-miso as needed if you run out.

Finishing your noodles is not the end of your meal. There are also eggs on the table!
Take one egg and add it to the bowl! Mix it with the rest of the sauce. You can take an egg without asking the staff.
